Peach Fritters: 20 minutes (10 minutes prep and 8-10 cooking; makes 10 servings)
I always check the BOGO deals when I step into Publix, even when I’m there for one thing (which then leads to me buying more than the one thing!). It’s the nature of the BOGO. I sure as hell don’t need it, but it’s going in the cart. I will never regret getting peaches on BOGO though. Either by themselves as a snack with mascarpone, or chopped up in salsa, peaches can’t be beat. I decided on dessert with what I didn’t use for cooking this week.
Peach fritters can be made quickly and healtier in the air fryer. I avoid the oven because it will heat the house too much, and frying, even in a pan, can be messy (at least for me it always is). I like to add even more fiber by mixing 1/2 cup AP flour with 1/2 cup whole wheat pastry flour. It will make the breading light and airy.
Ingredients:
- 1/2 cup all-purpose flour and 1/2 cup whole wheat pastry flour (or you can use 1 cup all-purpose flour)
- 1/4 cup granulated sugar (0r use a 1:1 substitute like Monk Fruit sugar to lessen calories)
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 cup milk (whole milk for richer flavor, or less for a lighter fritter)
- 1 large egg
- 2 tbsp melted butter
- 1 medium peach, diced (about 1/2 cup), fresh, frozen, or drained canned peaches
- Spray canola oil (optional, for crispier texture)
Insturctions:
- Preparation: Line the air fryer basket with parchment paper.
- Combine dry ingredients: Whisk together flour, sugar, baking powder, and cinnamon in a bowl.
- Combine wet ingredients: In a separate bowl, whisk together egg, milk, and melted butter.
- Combine wet and dry ingredients: Gently fold the wet ingredients into the dry ingredients until just combined.
- Add in peaches: Gently fold in the diced peaches, taking care not to overmix.
- Form the fritters: Drop tablespoon-sized batter amounts onto the parchment paper in the air fryer basket, leaving space between them. Cook in batches if needed.
- Air fry: Cook at 365°F (185°C) for 8-10 minutes, until golden brown.
- Cool and serve: Transfer cooked fritters to a cooling rack and repeat with remaining batter.
