Air Fryer Lemon Herb Salmon & Asparagus: Healthy 15-Minute Dinner

Salmon and Asparagus: 12-15 minutes (makes 2 servings)

This recipe is one I adapted to use the air fryer with. I would usually do a large batch of salmon in the oven, sheet pan style. My current air fryer is a 6.8 quart, so it’s great for a quick dinner when I’m short on time. For smaller meals or side dishes, the air fryer is much more energy-efficient than heating up a large oven. It uses less power and concentrates that heat into a smaller chamber, making it a more economical choice for single servings or meals for two.

Honestly, I would have never used an air fryer in the past. My friends would rave about having an air fryer, but I couldn’t understand why. They’re great for reheating french fries? That’s cool, but I didn’t feel the need to spend money on an appliance for just that. I eventually caved in and bought a used one. My first attempt left me underwhelmed. I picked a safe option (chicken), and while the process was quick, I wasn’t in love with how it turned out. So sadly it sat on the top shelf of my pantry for about two years. It wasn’t until an ex-boyfriend got me to plug it back up that I learned the air fryer’s true potential. Soon I was doing all kinds of meals and came to deeply appreciate this little kitchen wonder.

The benefit of a fast cooking time and the superior crispiness makes the air fryer perfect for seafood, especially salmon. I leave the skin on the salmon fillets so they have a crispy crunch. The salmon comes out perfectly flaky every time. Salmon has a distinct taste, but can be seasoned different ways. One favorite I use is a simple cajun seasoning. You can switch out the vegetables, but I love asparagus for it’s quick cook time and health benefits. It’s loaded with fiber and keeps you feeling full. It’s also known for it’s anti-inflammatory properties since it’s high in anitoxidants.

Ingredients:

  • 2 (4-6 oz) salmon fillets, skin on or off
  • 1 bunch asparagus (about 1 lb), woody ends trimmed
  • 1 tbsp olive oil
  • 1/2 lemon, thinly sliced, plus 1 tbsp lemon juice
  • 1 tsp dried mixed herbs (like Italian seasoning or Herbs de Provence)
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Instructions:

  1. Prep Salmon & Asparagus: Pat salmon fillets dry with a paper towel. In a medium bowl, toss the trimmed asparagus with 1/2 tablespoon of olive oil, salt, and pepper.
  2. Season Salmon: Drizzle the salmon fillets with the remaining 1/2 tablespoon of olive oil. Season generously with salt, pepper, dried herbs, and garlic powder. Squeeze lemon juice over the top.
  3. Air Fry: Preheat your air fryer to 375°F (190°C) for 2-3 minutes if your model requires it.
  4. Arrange: Place the seasoned asparagus in a single layer in the air fryer basket. Arrange the salmon fillets on top of or next to the asparagus. Lay a few lemon slices on top of each salmon fillet.
  5. Cook: Air fry for 12-15 minutes, or until the salmon is cooked through and flakes easily, and the asparagus is tender-crisp. Cooking time will vary based on fillet thickness and air fryer model.
  6. Serve: Carefully remove from the air fryer and serve immediately.
