Ground Beef and Broccoli: (30 minutes, makes 4 servings)
There’s always that one day that I’m short on time, or I just completely forgot about whatever important thing I had to do. This recipe helps so much with cutting down on the time I spend in the kitchen. It also is flexible and gives me different options for leftovers. This recipe can be used to make wraps or fried rice later on. Also, it’s a take-out-inspired bowl in 30 minutes, so if you have a craving, this is a great go-to option that will save time and money.
The best part though is how healthy this is. This is low carb and high in protein. Depending on how you choose to customize it, you can fit in more vegetable servings. This recipe is great over rice and noodles, or used as a filling for lettuce wraps. The key with this recipe is to make sure to make the patties as thin as possible. I make sure to divide the meat as evenly as possible and then make the patties. You can check on the patties throughout the cooking proces so you get the level of done you like.

Ingredients:
- 1 lb lean ground beef (90% lean or higher)
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- ½ tsp ground ginger
- ¼ tsp red pepper flakes (optional, for a kick)
- 1 large head of broccoli, cut into small florets
- 1 tbsp olive oil
- Salt and black pepper to taste
- Optional garnish: sesame seeds, chopped scallions
Instructions:
- Make the Patties: In a medium bowl, combine the ground beef with the soy sauce, rice vinegar, sesame oil, ground ginger, and red pepper flakes. Use your hands to mix until well combined, then form into small, even-sized patties (about 2-3 inches wide).
- Warm the Air Fryer: Preheat your air fryer to 380°F (195°C) for 3 minutes.
- Prepare the Broccoli: Toss the broccoli florets with olive oil, salt, and pepper in a separate bowl.
- Cook the Patties: Place the ground beef patties in a single layer in the air fryer basket. Cook for 8-15 minutes, flipping halfway through. Cooking time may vary based on the thickness of the patties and your desired doneness.
- Add in Broccoli: After the patties have cooked for 5 minutes, add the seasoned broccoli to the basket alongside them. Continue cooking for the remaining 3-5 minutes, until the beef is cooked through and the broccoli is tender-crisp.
- Enjoy: Carefully remove from the air fryer. Serve the beef and broccoli in a bowl, garnished with sesame seeds and scallions if you’d like.
