Potatoes and Eggs: 15-18 minutes (makes 1 serving)
Each day feels like it’s shorter and shorter. I’ve had to deal with schedule changes, which makes me feel like I have less time. Luckily, I’ve gotten pretty creative when it comes to getting ready in the morning. While I can’t move my work schedule around, I can move around the timing for meals and prep work. I’ve taken to dicing up vegetables and storing them in the refridgerator to make cooking go faster. It’s been a huge help. So when I want to spoil myself with a faux- not-so -healthy breakfast, I do it in under 20 minutes.
For this recipe, I prep the potatoe cubes in advance. I sometimes substitute one of the eggs with egg whites to reduce the calories and keep the protein. You can always add some additional vegetables to this loaded potatoes and egg breakfast to make it different. Try it with some cheddar, onions and bell peppers, or spinach and feta (which is my favorite!). This come together quickly in an air fryer and reduces the mess. Fun thing I recently tried was frying the feta in a skillet separately and adding it last, which gives it a bump up in texture and flavor.

Ingredients:
- 1 large potato (e.g., Russet, Yukon Gold), diced into ½-inch cubes
- 1 tsp olive oil
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- Salt and black pepper to taste
- 2 large eggs
- Optional garnishes: chopped fresh chives or green onions, a sprinkle of cheese (feta or cheddar), or a dollop of hot sauce.
Instructions:
- In a small bowl, toss the diced potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Preheat your air fryer to 380°F (195°C) for 3 minutes.
- Place the seasoned potatoes in the air fryer basket in a single layer. Air fry for 10-12 minutes, shaking the basket halfway through, until they are golden brown and tender.
- While the potatoes are cooking, whisk the eggs in a small bowl with a pinch of salt and pepper.
- Once the potatoes are cooked, push them to one side of the basket to make space. Pour the whisked eggs directly into the empty side of the basket (they will cook quickly like a frittata or scrambled eggs).
- Continue air frying for another 3-5 minutes, or until the eggs are set to your desired doneness.
- Carefully scoop the potatoes and eggs into a bowl. Garnish with your favorite toppings and serve immediately.
