Easy Air Fryer Sausage & Egg Casserole: A High-Protein Breakfast

Breakfast Casserole: 25 minutes (makes 2 servings)

I’ve had to make some quick changes to my routines and the air fryer has been a huge help. Returning to the morning commute for work was rough at first. I could no longer saunter over to my office from my bedroom an twenty minutes before my work day. I was back to having a 45 minute commute to the next county for work in morning traffic. That meant getting up around 6 AM to do my workout that was normally done during my lunch hour at home. If I wanted have time to eat breakfast and shower, I would need to cut corners somewhere. Enter the air fryer. I set the air fryer up, do the meal prep, and while it’s cooking, I take a shower. Breakfast is ready just before I’m done getting dressed!

This easy recipe is super easy because of the precooked sausage. I like turkey sausauge the best. I pop one or two patties in the microwave for one minute to get them soft enough to crumble and mix in. This casserole is an excellent source of lean protein from the eggs and sausage. Protein is essential for feeling full and satisfied, and providing sustained energy throughout the morning. The diced bell peppers add essential vitamins like Vitamin C and antioxidants without a significant calorie increase. I use a reduced fat or fat-free cheese to keep the calories low.

Ingredients:

  • 4 large eggs
  • ¼ cup milk (you can also use an unsweetened plant based milk)
  • 1 cup cooked, crumbled breakfast sausage or tofu
  • ½ cup shredded cheddar cheese
  • ½ cup diced bell peppers
  • Salt and black pepper to taste

Instructions:

  1. Prep the Air Fryer: Lightly grease a small, oven-safe dish that fits in your air fryer basket (e.g., a 6-inch cake pan or two large ramekins). Preheat the air fryer if necessary.
  2. Mix the Eggs: In a bowl, whisk the eggs, milk, salt, and pepper until combined.
  3. Add In: Stir in the cooked sausage, cheese, and bell peppers.
  4. Cook: Pour the mixture into your prepared dish and place the dish in the air fryer basket. Cook at 320°F (160°C) for 15-20 minutes, or until the center is set and the top is lightly golden.
  5. Enjoy: Let it cool for a few minutes before slicing and serving.
